前日に調理したチャーハンを食べて食中毒になったら原因はセレウス菌の毒素（セレウリド）かもしれません
オリンピックは夏の暑い時に開催されますが、
あたたかい時期は、食中毒をおこす菌が増えやすくなる時期でもあります。
前日に作ったチャーハンを入れた弁当をオリンピックなどの会場へ持っていって、
選手に食べさせると試合に負けるかもしれません。
その理由は、セレウス菌による食中毒をおこすことがあるからです。
チャーハンを作る時には加熱しますが、
セレウス菌は熱に強いのです。
調理後に室温に放置すると、あたたかいところではセレウス菌がどんどん増殖します。
そしてセレウス菌は毒素を出します。
翌日に食べる直前に加熱しても、菌はいなくなりますが
セレウス菌がだした毒素はなくなりません。
セレウス菌は米などの穀類についていることが多い菌です。
チャーハンに限らず、穀類で作った料理である、ピラフなども
セレウス菌による食中毒の予防対策が必要です。
調理の時に加熱すると、多くの菌は殺菌されますが、
セレウス菌は芽胞になって生き残ります。
調理後にそれをそのままあたたかいところに１日おいておくと
芽胞から菌の状態にもどり
百、千、万、10万と増えていきます。
そしてセレウリドという毒素をだします。
一晩で弁当の中のセレウス菌は100万個以上に増殖し、
弁当は、菌が出す毒素もたっぷり入った状態になります。
食べる直前に加熱してもセレウス菌による食中毒は防げません。
高温で菌はなくなりますが、
菌の出した毒素はそのまま残ります。
だから、それを食べると激しい嘔吐をおこし、
腹痛、下痢症状もでて
スポーツどころではなくなってしまうのです。
食中毒予防の3原則はつけない増やさないやっつけるですが、
セレウス菌は熱に強いので、やっつけられません。
だから増やさないのがとても大切なのです。
それには、細菌の増殖する3条件である①栄養②水③温度を満たさないように、
料理は調理後すぐに冷蔵庫で冷やした方がいいのです。
加熱だけで食中毒は防げません。
食中毒の原因菌が増殖しないよう、
弁当をあたたかいところに置いたままにするのはやめましょう。
