食中毒の報道をする方は、タイトルに「野菜が原因」と書かないで
いただきたいと思います。
「野菜の表面についていた細菌が原因」と表現してほしいのです。
「野菜が原因」と書いてあると、それを読んだ大勢の人が、
野菜の中に細菌がいたのだと誤認してしまいます。
食中毒の菌を含む、ほとんどの細菌は、植物の細胞の中に入る
ことができません。だから野菜の中で食中毒の細菌が増殖する
ことはないのです。
しかし、実際には、野菜から検体をとって細菌培養すると、
一般細菌や食中毒の細菌が検出されます。野菜を食べて食中毒を
おこす人もいます。
それらはみな、野菜の中ではなく外の表面についていた
細菌によるものなのです。
野菜の表面が細菌の増殖する3条件を満たしていると、そこで細菌が増えます。
3条件とは、栄養・水・温度です。
最初は細菌の数が1個でも、3条件を満たしていれば、2時間以上たつと
食中毒を発症させるのに必要な数まで細菌が増えてしまいます。
食中毒がおこるしくみを理解している人にとって、
食中毒を予防することは難しいことではありません。
食中毒予防の3原則である「つけない」「増やさない」「やっつける」
に気をつけていればいいのです。
誰かが野菜さんの着ている服にバイキンをつけました。
そしてそれを食べた人が食中毒をおこしました。
野菜さんの服を検査したら食中毒の菌が検出されました。
この時に、野菜さんを冤罪で誤認逮捕して牢屋に入れてはいけません。
「食中毒の原因は野菜」という表現は野菜に対する濡れ衣です。
野菜を加工した食品には、野菜の細胞から出た成分が
たっぷり入っていますが、それは元の細胞を破壊した後の「栄養」です。
細胞の集合体である野菜とは違います。
野菜の細胞さんは無実です。食中毒事件は栄養があるところで増えるバイキンがおこすのです。
