魚や貝などの海産物の腸炎ビブリオによる食中毒を防止する方法を考えてみました。
腸炎ビブリオは海の中にいます。
増殖がとても速い菌です。
あたたかくなると10分ぐらいで2倍になり、約3時間で10万以上に増え、
それを食べた人に食中毒をおこします。
半日程度の潜伏期の後、強烈な腹痛で発症し、
腸炎ビブリオが腸から外へ出てしまうまで下痢が続きます。
●刺身のTIMC式腸炎ビブリオ対策の手順
工場で魚を包丁で切り、刺身にする
→刺身を氷水の中にいれる
→水から刺身をとり出して真空パック
→冷却したまま店舗へ輸送
→販売時に真空パックの周囲に氷をいれて、
自宅まで持ち帰ってもらう。
→家に帰ったら、すぐに冷蔵庫へ入れる。
※海の中に住んでいる腸炎ビブリオは、塩分のない真水が嫌いであり、
水でいなくなります。
※腸炎ビブリオに限らず、ほとんどの細菌は、
壊れていない細胞の中に侵入することができません。
バイキンは刺身の中ではなく表面につくのです。
※店で購入した時に、刺身が入っているパックの中に
空間があると、周囲に氷を入れても冷却が
不完全になってしまいます。
※真空パックにすれば、刺身の表面に細菌が
付着するのを防げますし、好気性菌の繁殖の抑制にもなります。
